This dish is packed with flavour, and will definitely satisfy your cravings! The chicken is char-grilled to perfection, and the salad is a refreshing mix of crisp greens, cucumber slices, and tomatoes. You can even add some of your favourite cheese as an optional extra. If you’d like a dressing with your salad, a simple vinaigrette will tie everything together perfectly.
The Ingredients:
For this Spicy O’Reilly’s char-grilled chicken kebab recipe, use 600g of boneless and skinless chicken thighs and cut into small pieces.
Four tablespoons of full fat Greek yoghurt is needed for this recipe.
Try 2 or 3 cloves of garlic, peeled and smashed or minced to your preference.
Spicy O’Reilly’s Sauce can now be added; 1 tablespoon, or as much as your spicy heart desires. You can use Original sauce of course but my personal favourite sauce to use for this recipe is the Hot Mango. If you fancy enjoying more of a barbecue flavour, Smokin’ Hot is the way to go!

Spicy O’Reilly’s Marinade
2 tsp of lemon juice
Use half a teaspoon of black pepper.
One-half teaspoon of salt.
The method we use for this delicious spicy recipe is quite simple to follow. We take the exact same approach each time we make this, and it is relatively easy to make this delicious chicken kebab.
Next, combine all ingredients, apart from the chicken, into a single, smooth mixture.
Incorporate the pieces of chicken into the mixture, stirring gently with your hand or a spoon until each piece of chicken is evenly coated with the mixture.
Allow the chicken pieces to steep in the marinade for at least 4 hours but, if you have more time, let them marinate overnight.
The Cooking Method:
For best results, we should try to replicate the temperature and airflow of a tandoor oven to get the perfectly charred roast chicken. Heat is vital and good circulation around the pieces is essential.
Set the oven to its top temperature of 220-240°C before you begin cooking.
Arrange the marinated chicken pieces on a wire rack above a roasting tray, or, if you have them, put the chicken on skewers and suspend them over the roasting tray. Cooking time will vary depending on the size of the chicken pieces. I generally cut my chicken thighs into 3 or 4 pieces before marination. I’ll check them after 10 minutes in the oven, spin the tray around if they’re cooking faster on one side, and then put back in for another 5 minutes. Take them out when they’re starting to blacken on the edges. Check every couple of minutes until you’re happy with them.

Cooking Tips
1. Start with a high-quality chicken breast. If you’re using frozen chicken, be sure to thaw it completely before grilling.
2. Season the chicken breast properly. I like to use a simple mixture of olive oil, garlic, and salt.
3. Preheat your grill to very high heat before you start cooking.
4. Grill the chicken for about 5 minutes per side, or until cooked through. Allow some of the chicken to “catch” to develop that char-grilled taste.
5. Remove from grill and let rest for a few minutes before chopping into bite-sized pieces.
6. In a large bowl, mix together chopped grilled chicken, salad leaves, tomatoes, fresh cilantro (coriander), lime juice, and salt to taste.
6. Divide mixture evenly among four whole wheat tortillas or wraps. Roll up each wrap tightly and enjoy!
To Serve:
Serve the chicken pieces on flour tortillas with a side order of salad leaves, cucumber, tomatoes, plain yoghurt, and a few extra dashes of your favourite Spicy O’Reilly’s Hot Pepper Sauce to satisfy your spicy craving. Try adding a few spicy wedges or (my fave), a pile of sweet potato fries on the side!

There are endless possibilities when it comes to customising this flavour-packed char-grilled chicken salad wrap. Here are a few of our favorite variations:
For a Tex-Mex twist, add some cumin and to the spice blend.
